Bisschopsmolen

The Bisschopsmolen (Bishop's Mill) is a traditional bakery and the oldest working water mill in the heart of Maastricht. Dating from the 7th century, this water mill is in use 6 days a week. At our bakery, we mostly use locally produced
ingredients, and Kollenberger Spelt, a traditional species of grain, is our specialty. Our growers have obtained an environmental seal of approval for the
Spelt that they grow. The Bisschopsmolen is a great place for a coffee and a deliciously old-fashioned slice of vlaai (sweet flan) or enjoy a traditional farmer’s lunch which Limburg is famous for.
